I'm thinking I've mentioned this before...but...

Went to this high end restaurant down the road...was taken actually...I never would have paid their prices...but the food was good. It was smoked with some sort of wood. I was wandering my way back to the restrooms and ran into the chef...yea, he was a real life chef not some pimple faced kid in highschool. I asked him what kind of wood he was smoking with. He said, before I tell you, you tell me what you use. Oh...mesquite, if I can't find mesquite I just don't bother. He's like...damned Texan. No...but that's where I learned to smoke meat. Yea, whatever.

So what are you using? Persimmon, he said.

It put a unique flavor to the meat. If you can come by some, sometime...you ought to give it a try.

Hope your apple brined hickory smoked turdkey turns out...who knows, maybe you have come up with the magic elixir that makes turdkey worthy of ingesting. 😁
