Re: Pork Bellies/Gian
In Response To: Re: Pork Bellies/Gian ()

Frozen bellies are not bacon.

Point of fact, to hit the old delivery specs, those bellies could tap dance. 16 to 18 pounders (14 deliverable at a substantial discount) and the "freckles were so limited that less than 10% of bellies of that weight (16-18) could be deliverable, at par (without discount - and the discounts could be substantial).

The "trade" side o the belly market were the slicers. Since the packing industry has become so all inclusive (not even referencing packer owned and contracted hogs), of full processing, the number of independent slicers fell to next to nothing.

Bellies need to be brined, smoked and sliced (well, technically you don't need the slicing) to become bacon.

Bacon comes from bellies, but bellies aren't limited to bacon.

When the price of the belly market was exceedingly low, it was not uncommon for well over 50% o them to be ground into the 42% trim.

Not trying to be a nitpicker, but if you think bellies are bacon, you knew little of the industry.
