I've taken deer to be processed before and likely would have continued doing so except the prices started going up till last I had an account was 70 dollars. two, three, four deer a year and that starts adding up. I figured if I bought myself a grinder I could pay for it in saved processing fees. So, that's what I did. Let the great neph hunt the deer...taught him how to field dress and then process them. Some time around the third deer he drags a lawn chair in and say's...take a seat Unc, I want to do this one all myself. Ahhh...master plan success! haha

I had always heard to mix in pork fat with the ground venison but the guys at the butcher shop I frequent swore up and down you're supposed to use beef fat, so that's what I used. I don't know if they said that because all they had was beef fat but it seemed to work ok. The little deer that got hit by a car earlier this year...when I ground it up, I threw in several rolls of store bought sausage...that tasted pretty danged good.
